Glass of Wine with Becca

Quiche

INGREDIENTS

1 or 2 pie crusts
10 strips of turkey bacon
4 large eggs
1 1/2 cups cream
1/4 teaspoon thyme
1/8 teaspoon white pepper
1/2 cup shredded Gruyere (a cheese from Switzerland, can use Swiss, but Gruyerre is much better and will add more flavor)
1/2 cup sharp cheddar
1 small white onion chopped
broccoli
sometimes I add a little nutmeg

Preheat oven to 375 degrees. Line crust with foil and dried beans and bake for 10 minutes. Remove foil and beans. Bake for 5 more minutes and let cool.

Fry the bacon until it is crispy. Drain on a paper towel.

Cut up onions and broccoli. I leave some broccoli in hunks, but also chop up the flowers a bit so they are in little pieces. If peeled the stems are really good.

In a small bowl whisk the eggs, cream, thyme and pepper together and pour into the cooled crust. Crumble in the bacon. Add onions and broccoli, sprinkling evenly throughout the crust. Add Gruyere and cheddar. Bake about 30 minutes until golden. Serve warm. Can be frozen for up to a month.

Glass of Wine with Becca

Grilled Salmon

INGREDIENTS

1 salmon fillet
soy sauce
lemon juice
1-4 cloves garlic
olive oil
Tabasco sauce
salt and pepper
1/2 cup sharp cheddar

This is not a specific recipe, you have to modify to your taste. Put salmon in a small shallow bowl. I use a soup bowl. Add soy sauce until salmon is partially covered. Add two or three dashes of lemon juice, two or three dashes of olive oil, as much garlic as you like, a couple of dashes of Tabasco (not a lot)and salt/pepper to taste. Let this marinate for 20-30 minutes. Put on hot grill with skin side down until top get that white stuff on it. Flip it over (skin may stick to grill, but I always throw it away anyway). Grill on other side until you get grill marks. Serve with veggies and rice (wild or white).
