My Dear Friend David
So my Dear Friend David. A very special, kind and generous soul. Honest and fair. Sweet and spiritual. A man who tries everyday to do something for another. A man I enjoy going to church with.
So lets take a moment to mention how we became friends. Well, I was working at a restaurant and realized almost from the day he started working with us to care about a wonderful Man named Bill. He was strong yet vulnerable and there were somethings that happened to him that just were unfair. He was one of those people who deserved only the best, yet he had David who was the best for him and I respected him for that. As the story goes it seems that when Bill went home after work he would mention me (why I have no clue but he did) to his partner David. Now there is this wonderful festival in our neighborhood and one day I was there by myself, a very normal occurance for me, and David noticed me. He came up and introduced himself to me. At that introduction we became friends. How something like this happens I don't know, understand or would ever question. What I do know is that I have some very incredible memories of times spent with the two of them. A day when it was 98 degrees out, the 4th of July, and I was leaving to go to Mass at what was my favorite church. When I walked out of my house I found a couch in excellent condition on the curb across the street from my house. I proceeded to Mass, figuring that if it was still there when I returned that it must be meant to be mine. And there it was when I returned. I took the cushions in with me knowing it was a holiday and that it might be impossible to find anyone to help me, basically figuring it might be impossible. But I called David and Bill and they were over in a flash. In 98 degree weather they not only hauled my old couch to the curb but brought the new one up. They didn't want anything in return. They simply came and helped me. This is friendship and how could I not respect them and love their friendship as a result.
There is one other thing here that I would like to say and that these two people LOVED one another. They were partners, lovers and friends. David loves Bette Davis . Now, there are those who feel a need to judge the choices they have made but when it comes to Love there isn't a person out there that has the right to tell us where our heart takes us. Love is still Love and with Love we each find completion, no matter what direction it takes us. It's a choice of how your soul feels complete, of what sparks you and fills your life like nothing else. Those of us who have ever been in Love know what I mean. We also know that there is nothing short of death that can take that away from us. It's getting out of oneself because you have something so special that it increases the depths of who you are. David and Bill were like this. Bill passed almost one year ago and if you look lower on this page you will find a link to a special page where David will tell you in person about Bill and what he offered to his life. The laughs, the joys and how he helped him grow. Moments that are filled with Love. Please read them and say a prayer with David and me so that Bill know that he will always be remembered.

DAVID'S OLD FASHIONED
RASPBERRY PIE

INGREDIENTS
1 box Pillsbury pie crust (two crusts)
4 cups raspberries
1 cup sugar
1/2 cup crushed corn flakes
3 tablespoons flour
lemon juice
butter
Preheat oven to 375 degrees.
Fit bottom crust in 9 inch pie plate. (Pillsury recommends a glass pie dish.) Sprinkle corn flakes on bottom crust. In a separate bowl, mix sugar and flour well. Put berries in a larger bowl. Sprinkle sugar/flour mixture over berries. Gently toss to coat berries. Pour over bottom crust. Sprinkle with a little lemon juice. Dot with about 1/3 stick butter or margarine cut in small pieces. Place top crust on and crimp edges to seal. Cut several slits in top crust to allow steam to escape. Lightly brush top crust and edges with milk. Sprinkle with sugar.
Bake in oven for about 30 minutes. Check. You may have to put foil around edges to prevent over-browning. Reduce heat to 350 degrees. Bake another 20 to 30 minutes or more, checking until crust is golden brown. Allow to cool before serving. Great served with vanilla ice cream.

“RENA’S” SPAGHETTI SAUCE

INGREDIENTS
1 stick butter or margarine
1/4 cup olive oil
2 medium or 1 very large onion(s) finely chopped
2 medium or 1 very large green pepper(s) finely chopped
3 to 4 ribs celery finely chopped (also include some of the celery leaves)
2 to 4 cloves finely chopped garlic or 2 to 3 teaspoons garlic powder
2 large (28 oz?) cans of Hunt’s tomato sauce
salt and pepper to taste
In a large pot, melt butter with oil. Sauté onion, green pepper and celery over medium heat until soft and transparent. Do not brown. If using fresh chopped garlic, add now, and continue to cook for only a minute or two so as to not brown garlic. Add tomato sauce. Add a little water to empty sauce cans to rinse out any additional sauce and add to sauce mixture. Add salt and pepper. If using garlic powder, add that now too. Bring to a boil over medium heat stirring occasionally. Reduce heat to simmer. Simmer for about an hour. Remove from heat. Always seems to be better if you just leave it on the stove to cool down. Then reheat when you are ready to eat.
This is good as is on pasta with parmesan cheese, but here are some other ideas to use this sauce:
MEAT SAUCE - Add a pound or so of browned and drained ground beef to sauce after it starts to boil.
CHICKEN CACCITORE - Use chicken pieces with bones, but remove skin. Season lighlty with salt, pepper, and garlic powder. Bake chicken in a roasting pan at 375 for about 45 minutes turning once. Pour finished spaghetti sauce over chicken, cover, and simmer in oven at about 325 for an hour or so. Remove chicken pieces to platter, and use remaining sauce for the spaghetti. This is a Koskey family favorite!!! Very good!!!
ITALIAN SAUSAGE - Boil several links of Italian sausage in water for about 20 minutes. Drain and cool for a few minutes. Cut sausage into 2 to 3 inch sections and add to sauce while it is simmering.
This makes a large batch of sauce. Freeze a container of sauce for a quick easy future meal!!!!
