I would like to introduce all of you to "my baby Sister". Born the summer before my Junior year in High School. The youngest of 10 and along with my Brother John the combination of my Father and Lady Helen. She is part of the "ours" in a family which consisted of a mixing of three families, sort of. I say sort of because none of us ever separated the numbers. We were all inclusive as one family. So I think when Sue came along, we all might have felt as if she was ours, a natural tendency with the age difference and all of those maternal instincts starting to kick in.

But who is Sue? Well, a very strong, beautiful, supportive, generous and loving woman. At thirty-nine she is the Mother of 2 absolutely wonderful children, Ben and Mandy. She is married to an equally awesome man, Don. They meet while in college on a school trip to Europe studying Forestry there. Don happens to be an incredible Father and Husband. Last year I actually observed him still flirting with Sue after 16 years of marriage, and he wasn't trying to impress me but just being himself. They are a team.

Don and Sue have Bachelor Degree's in Urban Forestry and Forest Recreation. I sometimes lovingly tease Sue about being "my Lumberjack Sister". Since getting that undergraduate degree she has been working at the college she went to as the Coordinator of Advising and Recruitment for the College of Natural Resources. She also is an advisor for the CNR Peer Advising Center, CNR Student Advisory Panel and Women in Human Resources. With all of this she also completed her Masters Degree in Natural Resources. Last May she was named the Environmental Career Counselor of the Year in a National Environmental Career Center's annual competition. Last years winner was from Yale, so for a very small state school this is quite an accomplishment and we all are extremely proud of her.

Don has worked for the DNR in northern Wisconsin since graduating from college and is out there trying to preserve our universe for all of us. Ben is into soccer, football, hockey, hunting, science, nature, bike riding, strategy games and his lizards, Fred, Wilma and Bean. While Mandy enjoys singing, dance, basketball, soccer, bike riding and her guinea pig, Howie. Sue's spare time is spent with her family and friends. She also gardens, cans and cooks up some pretty mean dishes. My hope is that some of the wonderful delicacies she has come up with will be shared with all of us here and I know that you all will really enjoy her creations. RASPBERRY CHOCOLATE SUPREMES

INGREDIENTS

2 cups flour
1/4 cup powdered sugar
1/2 cup butter
1/2 cup raspberry jam
8 ounce package cream cheese
2 tablespoons milk
1 cup white chocolate (4 ounces)
2 ounces semi-sweet chocolate
1 teaspoon shortening

Combine flour, powdered sugar, and butter. Press into a 9 inch square pan. Bake for 15 to 17 minutes at 350 degree oven. Spread jam over crust. In bowl beat cream cheese and milk. Add melted white chocolate. Spread over jam. Refrig until set. Melt semi-sweet chocolate and shortening and spread over top. Keep refrigerated.

BODY-1 chilled pear half
EYES-2 raisins
NOSE-1 piece of cherry or red hot
EARS-2 blanched almonds
TAIL-a large marshmellow or cottage cheese

SALTED PEANUT CRISPS

INGREDIENTS

1 cup shortening
1 1/2 cups packed brown sugar
2 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
2 cups salted peanuts

Cream shortening, brown sugar, eggs and vanilla. Sift together flour, salt and baking soda. Add creamed mixture. Stir in peanuts. Drop dough by rounded teaspoons on greased baking sheet and about 2 inches apart. Grease the bottom of a glass. Flatten each cookie by dipping glass in sugar and pressing on each cookie. Bake at 350 degrees for 8 to 10 minutes.

CREAMY CHICKEN AND JALAPINO APPETIZERS

INGREDIENTS

1 whole chicken breast, diced
12 ounces cream cheese
2 Jalapeno peppers, seeded and minced (or you can use a can of green chilies for a milder taste)
3 T chopped red onion
2 cloves garlic, minced
1 t chili powder
1 t cumin
1 1/2 cups grated Monterey Jack and Cheddar Cheese
6 pita bread, cut and separated into rounds

Pre-heat oven to 375 degrees. Combine all ingredients except cheeses and pita in large bowl. Beat with electric mixer until well blended. Spread each pita round with generous amount of filling. Place on cookie sheet and top with cheese. Bake until puffed and bubbling 5 to 7 minutes. Serve with sour cream, salsa and guacamole.

PASTA PRIMAVERA

INGREDIENTS

1 bunch broccoli (1 pound)
2 small zucchini
1 pound linguini
1 large clove garlic
1 basket cherry tomatoes (halved)
1/4 cup olive oil
1/4 cup fresh basil or 1 teaspoon leaf basil
1/2 pound mushrooms (sliced)
1/2 cup frozen peas
1/4 cup chopped fresh parsley
1 1/2 teaspoon salt
1/4 teaspoon pepper
!/4 teaspoon crushed red pepper
1/4 cup butter (1/2 stick)
3/4 cups heavy cream
2/3 cup grated parmesan cheese

Prepare first 3 ingredients into bite size pieces. cook in boiling water until tender. Place in large bowl. Cook and drain linguini. Saute garlic and tomatoes in oil for 2 minutes. Stir in basil and mushrooms, cooking for 3 minutes. Stir in peas, parsley, salt and peppers, cooking 1 minute. Add to vegetables bowl. Melt butter in skillet, stirring in cream and cheese. Cook and stir until smooth. Add linguini and toss. Stir in vegetables: heat gently just until hot. (I use margarine and half and half to cut calories and cholesterol.

CALIFLOWER SALAD

INGREDIENTS

1 head lettuce
1 package frozen peas, thawed
1 head califlower
1 layer crisp fried bacon bits (1/2 pound)
1/2 package Good Seasons Italian dressing (used dry)
1 cup salad dressing
2 tablespoons sugar
parmesan cheese, shredded

Layer in order given, cover and refrigerate for 24 hours. Toss just before serving and serve.
